Creating the one & only

In order to offer a “one-&-only cup of coffee”, we need a “one-&-only set of beans”. That’s why all year round we travel to countries below the equator to find the best, carefully selected fresh beans. Brazil, Colombia, Guatemala, Ethiopia, Indonesia, the list goes on… today the red ripe berries of the best arabica come from all over the world. Once we choose our beans, they are hand-picked and washed in the water that flows through the region. The beans are then left to dry under the equator sun and fused under our own “blend” theory. The purpose of blending is to create a new taste. The blend at STREAMER is a technique to draw out the individuality of beans rather than to make up for any defect in each bean. Preservatives, bulking fillers, and flavorings which are a commonplace with most chainstore and dollar coffees, obviously have no place at our institution. At STREAMER, the combination of beans (=“the blend”) gives the three dimensional feel to our coffee, brings out the flavor, and gives it depth. (Do you know that the greatest wines, whiskeys and brandies of the world are blends? )

Once our blend is perfectly balanced, the next step is roasting. Roasting is the moment to bring out the life force in the coffee itself. At STREAMER, we call it the “baptism by fire”. Our experienced roast master watches over the roasting process and takes twice the usual time (than common roasters) to heat the beans over a medium flame bringing them to their peak condition. He looks for the slightest hint of timing between the roasting and aromatic peaks that will bring out the best in the beans. It is a moment where acidity, bitterness and sweetness come together. A perfect aroma spreads through the roastery. Then we let the beans settle to cool off, and finally our bold yet elegant blend is born.
