At STREAMER, our baristas are the foundation. From skaters to messengers, musicians to IT geeks, our world-class baristas come with various backgrounds. They drip and pour hundreds or even thousands of cups of coffee before they are able to serve customers, rubbing-in plenary coffee skills day-in day-out before their debut as a full-fledged professional STREAMER barista. All this behind-the-scene effort to achieve the freshest coffee possible for every cup they serve, faithfully expressing the original flavor of the beans, and to attain mastery of coffee-making with a sense of authenticity that cannot be replicated by a push of a single button. Across the various STREAMER stores, line supercharged modified espresso machines from Florence, Macerata, Seattle, D.C. and from around the world. The baristas at STREAMER manually calibrate these machines every day before they open. They take into account the temperature and humidity of the day, the condition of the beans, and the number of days from roasting, and then they tune up the 7,000-watt monsters. They sharpen the heavily spent old-timer mill blades to apply the best possible grind. They use aroma of ground coffee in the air to check the condition of the beans one last time before they go for the brew. The pressure on the machines rise to 10 bar, while the beans are crammed into 21 g bottomless baskets. The boiler swells to 92 degrees C, the temperature at which the beans are most easily amplified. From there, it takes all five senses to create a one-&-only shot in about 45 seconds. For lattes and cappuccinos, the baristas steam milk at the same time, which instantly transform into the finest possible foam. They rely on the rotation of the milk in the pitcher, the subtle high-pitched sound of the steamer, and the changing aroma of the milk as it interacts with the rising temperature.
